Summer vegetable salads

Summer is slowly saying goodbye to us but days are still hot (mostly). I tried a couple of summer vegetable salads that are vegan, healthy, fresh and easy to prepare. Salads belong to summer and I have 4 variations for you but I think you will be eat them during another season too because they are really good. Of course the ingredients can be change depending on what you like.

Fake Shopska salad
Ingredients
1 bell pepper
2 tomatoes
2/1 cucumber
1 small onion
plain tofu
salt
pepper
Preparation method
In a bowl pour water, salt and tofu and leave it in the fridge overnight. In an another bowl mix all the chopped vegetable, add pepper and salt to taste and sprinkle with crumbled tofu.

Onion-vinegar salad
Ingredients
2 tomatoes
2/1 cucumber
a few leaves of Chinese cabbage
1 small onion
vinegar
salt
pepper
olive oil
sugar
Preparation method
Chop the vegetable into a bowl. Into another container pour water, drizzle with olive oil (depending on how much dressing you want) and add salt, pepper, vinegar and sugar to taste. Mix everything together.

Chilli salad with tofu
Ingredients
1 bell pepper
2 tomatoes
2/1 cucumber
chilli tofu
salt
pepper
chilli
fresh basil
olive oil
Preparation method
Chop the vegetable into a bowl. Season with salt, pepper, chopped basil and chilli. Finally, sprinkle with crumbled chilli tofu and drizzle with olive oil.

Pasta salad with black salt
Ingredients
1 bell pepper
2 tomatoes
2/1 cucumber
1 small onion
plain tofu
a handful of pasta
pepper
black salt
Preparation method
Cook the pasta and let it cool. Chop vegetable and tofu and mix with pasta. According to taste, add pepper and black salt.
